In vintage 2010: Free SO2 target at bottling is 35 ppm; also uses approximately 800 mg of CO2 (which is much higher than most producers – see Le Moine for another example)

In vintage 2017: (per William Kelley of the Wine Advocate) Ballot Millot now has a target of 40 ppm of free SO2
