Background

  • In vintage 1999: stirred the lees once per week; duration unspecified.
  • In vintage 2000: per Allen Meadows: “Boillot said that he did a full eight months of bâtonnage (most domaines stop after the malo is completed).”
  • In vintage 2002: no information on batonnage
  • In vintage 2003: “I also did almost no bâtonnage, which is to say only two times total as I felt it was critical to retain as much CO2 as possible.”
  • In vintage 2004: no batonnage except for the bourgogne and the three village wines
  • In vintage 2005: no batonnage
