Bouchard Background information


  • In vintage 1996: no information about batonnage.
  • In vintages 1999 and 2000: under new winemaker Philippe Prost, batonnage is used but is done by rolling the barrels to avoid the unnecessary addition of oxygen.
  • In vintage 2002: a bit more lees stirring than normal because the acids were good and would support more richness. “We continued the lees stirring after the malos had finished, wihch is unusual for us.” (Note that this was apparently conventional lees stirring –see comments on vintage 2003).
  • In vintage 2003: “We did acidify lightly after the primary fermentation but we did absolutely no bâtonnageat all, preferring instead to roll the barrels to distribute the fine lees. We used much less new oak than usual as the wines didn’t need it and bottled try and capture the freshness.”
  • In vintage 2004: Did more lees stirring than is the normal practice here.
  • In vintage 2007: Per John Gilman: now using unbleached corks and paraffin only coatings on the corks (not clear when this change was implemented). Per Philippe Prost, Bouchard's winemaker, corks are now obtained from dry-farmed source in Corsica where the the trees are stripped only once every 15 years. Moreover, because of concerns about large variances in the weight of corks (i.e. variations in cork density) Bouchard is now weighing all corks for their premium wines and is rejecting any underweight corks. Bravo Philippe!
  • In vintage 2009: Bouchard, along with its sister winery, William Fevre, has switched from natural cork to DIAM (agglomerated cork with a binding material. DIAM claims lower oxygen permeability than natural cork and virtually non-existent TCA)

  • Montrachet (30-31 Jul 2008): two bottles, both completely oxidized [Don Cornwell]
  • Montrachet(27 Jan 2006): quite young but already approachable, very good, not oxidized [Heinrich Steininger]
  • Montrachet (17 Jan 2010) Simply stunning, no oxidation, still hints of green colour, great acidity, time in hand, peaking now - next 5 years [Regan McCaffery]
  • Chevalier-Montrachet (27 Jul 2005): no oxidation, but almost green acidity rated: 87? [Don Cornwell]

  • Montrachet (4 Feb 2012): not oxidized, terrific nose that permeated the room. Very nice acidity and minerality, fruit has subsided somewhat; stood up well to a beaufort. Definitely at its peak, would not wait too much longer to drink [D.H. Lam]
