Background information

  • Fiche technique du Criots Batard Montrachet 2001:


Vinification:
Récolte manuelle en petites caisses. Raisins pressés très doucement avec un pressoir pneumatique. Débourbage statique. Pas de levurage et pas d’enzymage. Pas de chaptalisation. Fermentation en fûts (228 l). Fermentation très longue : 90 jours.
Elevage du vin :
La cave est froide d’où une évolution très lente des vins. FML en fûts. Bâtonnés 1 fois/semaine. Soutirés au mois de Juillet ( les vins sont poussés avec de l’air comprimé donc jamais pompés). Collés à la caséine et à la bentonite. Filtration légère au kieselgur. Mise en bouteille (par gravité) après 12 mois.

  • In vintage 2003: “we did no bâtonnage at all, limited the élevage period to 12 months, mostly in demi-muids (300 liter barrels) and bottled in September.”
