\\ **General information**: Raveneau's grapes are 100% hand harvested. The grapes are crushed before pressing and given a 12 hour\\ //débourbage //(gross lees settling). The fermentation takes place in large fermenters either with or without selected yeasts, depending on the vintage. The wines are placed in older barrels for 12 months and then placed in stainless steel for approximately another six months. (Note that this practice parallels that of Domaine Leflaive and Roulot, both of which also have a low incidence of premox.) New barrels (from Chassin) are used only to replace barrel stock. At approximately 18 months, the wines are usually fined, filtered and bottled.\\ \\

With patience, there are strong hints of the depth & power found in more regular vintages. Sweet white flowers in the nose, together with delicate minerality & surprisingly colorful texture on the palate. Luxurious refinement.
